Benjamin Franklin once said”Tell me and i forget,Teach me and i may remember,Involve me and i may learn”.That said, yesterday,i was on the phone with my friend who was acknowledging my delectable recipe of protein pudding.

Leaving that aside, the topic of discussion shifted towards cake as it was dinner time,i guess. He explained his love towards dessert to me and it occurs to me why not come up with a simple, healthy, protein cake recipe.

He asked a simple question which also spurred the idea of creating this recipe inside me.He asked”Can I Use Protein Powder Instead Of Flour For Baking?”.I didn’t answer, just went straight to the kitchen to come up with this recipe that i share with you in this blog. The only answer i came up with was”A slice of delectable chocolate protein cake”

Ingredients for Chocolate Protein Cake Recipe

A very simple but unique and delicious recipe I present to you for this protein powder cake. This only requires a couple of ingredients and voila!Your cake is ready.

  • Egg:Use a large sized egg or you can also use a flaxseed egg if you follow a vegan diet
  • Greek Yogurt:This recipe works with any kind of thick yogurt of your own choice-Dairy or non-dairy as long as it maintains a firm texture. To have more protein and fewer calories in your cake,Prefer non-fat Greek yogurt.
  • Oat Flour:You can either use store bought or homemade oat flour to prepare this recipe. You can also use almond flour or any other kind of flour for this recipe.Gluten-free can also be used if necessary.
  • Protein Powder:To achieve a moist protein cake, I suggest incorporating vegan protein powder, casein, or a blend of casein and whey. Whey alone is not recommended as it can become dry when heated.
  • Cocoa Powder:For a more healthier cake, use a natural cocoa powder without added sugars.
  • Milk Of Choice:This protein powder dessert can be made with any dairy or non-dairy milk,I used soy milk.
  • Baking Powder:An ingredient that makes your chocolate protein cake rise

Best Protein Powder For Baking

My recipe for this high protein cake uses chocolate flavored casein protein powder. After gaining considerable experience in baking with protein powder,i can now tell you that vegan and casein protein powders are the great protein powder options available on the table.Being different from whey, these two powders do not dry out when heated and help make a moist, gooey chocolate cake.

Whey can also be used to make a protein cake regardless of being dried out when heated, but the texture won’t remain the same.Your cake will be dry and like rubber, honestly I suggest that you dont use whey.

Flavor Of Protein Powder

For flavor,I recommend using a chocolate or vanilla flavored protein powder. I used a chocolate flavor variant.Flavored protein powders, which are commonly used in recipes, are already sweetened without the addition of sugars, so there is no need for more sweetener.

In case you choose an unflavored protein powder, you’ll need to enhance the taste with sweeteners like maple syrup, honey or any other sweetener easily available.Keep this in mind  when baking with protein powder.

Dairy-Free Protein Powder Cake

If you’re lactose intolerant, then don’t worry because I have a solution for you!You can simply replace the dairy products with plant based alternatives.

How To Replace Greek Yogurt?

Exchange greek yogurt with any kind of plant based yogurt which you prefer in your diet but it would be best if it has a firm texture.I highly recommend soy greek yogurt, soy skyr and coconut yogurt.

How To Replace Milk?

When it comes to milk, you get more flexibility than greek yogurt.Use your favorite plant based such as soy, almond, cashew or peanut milk.I always opt for unsweetened soy milk, its a perfect for baking and bulks some extra protein in the desert.

Making Of Chocolate Protein Cake

Get Prepared For Baking

Begin by preheating the oven to 180ºC (350°F) and lining a 20 cm(7.8 inches)cake mold with parchment paper.Put it aside for later while you prepare the protein batter for the cake.

Make the Protein Powder Cake

In a large sized mixing bowl,Beat the eggs with the greek yogurt until it becomes smooth. Now,Add the oat flour, protein powder, cocoa powder and baking powder.Start mixing, slowly adding the milk until you get smooth cake batter.Start with about 60ml(or ¼ cup) and add up to 180 ml (¾ cup) of milk-This depends on the type of protein powder used.

Bake and Enjoy

Transfer the cake batter to the prepared mold and bake in preheated hot oven for about 20 to 25 minutes.Insert a toothpick in the cake,if it comes out clean,it means you did a fine job and the cakes ready. Before serving, let the cake cool for a bit.

Storage Information Of Chocolate Protein Cake:

If you want to store, first let it cool for a bit in a chilled place. My advice, after taking it out of the oven, place it in a dish and let it rest at room temperature.Once cooled, you can refrigerate it for a maximum of 3 days.

To store it for a longer period of time, approximately 3 months, use a zip tight container and when you crave, take it out and eat without guilt.

Not exactly.  While the protein’s structure changes, it doesn’t become useless or harmful. It’s likely still digestible and nutritious.Heating whey protein can indeed have an effect on its structure and functionality, but it’s not about “destruction” as much as it is about change.
